the last vestiges of a long gone summer

I was talking to Jade a while back and, per usual, our discussion veered toward food, desserts in particular. When I mentioned I recently used the last of the peaches for my take on an after dinner drink: peaches soaked in white wine, surprise surprise! Jade had just made the very same thing. Great minds...here's my take:

6 ripe peaches or nectarines, sliced very thin
5 Tbsp vanilla sugar
1 vanilla bean, split and scraped
1/2 bottle sweet white wine

Combine all ingredients, chill for at least two hours, preferably overnight and serve - preferably in a pretty glass - with plenty of crème chantilly (whipped cream sweetened with powdered sugar and vanilla).

Cin Cin!
